So it's been awhile! I just got my wisdom teeth out so all I've been eating is ice cream and apple sauce. I guess I could have made some ice cream to post but my energy has been low and the thought of doing anything in the kitchen lately has not intrigued me. I cannot wait to be able to eat solid food again.. I'm just craving some steak or something that requires a lot of chewing! Anyways, here is a chili cheese dip that I made for the Super Bowl a few weeks ago.. It was sooo good. I'm not going to lie I like the food and commercials better than the game. It's such an easy recipe so I hope you all give it a try for your next party or get together! (I'll post the picture later tonight when I get home.. it's still not on the computer. oops!)
Ingredients:
1 package of cream cheese (non-fat or regular), at room temp
1 can of chili (I used without beans but you can go for beans if you wish)
1/2 package of mild Cheddar of Mexican blend cheese (4 oz.- but I tend to use more.. I like it cheesy)
1 bag of tortilla chips
Directions:
Spread the cream cheese on the bottom of a microwave-safe dish or in a brownie pan. Pour the chili over the cream cheese and spread evenly. Sprinkle the cheese on top. You can either microwave this dish or put it in the oven. I tend to microwave it unless my dish doesn't fit in the microwave and then I put it in the oven instead. Heat in the microwave for approximately 3-5 minutes (keep checking to see when the cheese is fully melted and bubbling a bit). For the oven, heat for about 8 minutes on 350 degrees F, checking every few minutes to see if the cheese is melted. You don't want to burn the cream cheese... just melt the top. Serve with tortilla chips.
