French Onion Soup


It's Nikki again. So I don't actually know if this is exactly 'french' onion soup, but it's pretty oniony and I think it tastes similar. I've always thought that soups were a lot of work but I have recently found that it is in fact one of the easier meals to make. I just kind of made this recipe up on a whim so I hope you like it as much as my roommates did.

Ingredients:
6 Sweet onions
1 stick of butter
1 tsp thyme or a couple of sprigs
salt and pepper to taste
2 bay leaves
6 cups of chicken stock.

Directions:
Melt the butter in a large pot, add sliced onions and cook over medium low heat until they start to brown. Add the thyme, salt, pepper and bay leaves and cook until caramelized (about 20-30 minutes). Once the onions are tender add the chicken stock and heat to a simmer. Remove bay leaves before serving.
If you want to, place a piece of toast on top, sprinkle with mozzarella and place under broiler until the cheese is brown and bubbly!
