Milk Chocolate Chip Buttermilk Pancakes



What is it about breakfast food that you can eat it any time of the day.. breakfast, lunch, dinner, it doesn't matter. Why can't you eat steak and mashed potatoes for breakfast? Even though I do that all the time, people still find it weird. Anyways, enough of my rant. I have an amazing breakfast, lunch, dinner option for you.. these pancakes. Perfect for lazy weekends, easy dinners, or dessert (just put some ice cream on top.. oh boy). They are so light, fluffy, and chocolatey that I think I could eat them all day.  Just posting about these pancakes makes me want more. The recipe makes quite a few pancakes. I think they could feed 4 normal people.. If you are feeding 3 college boys like I was I suggest making a double batch. Enjoy :)


Ingredients
2 eggs
2 cups flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
2 cups buttermilk
4 tablespoons butter, melted and cooled
1/2 teaspoon vanilla
3/4 cup milk chocolate chips
oil or cooking spray (for the pan)

Directions
In a large bowl, beat eggs. Then, mix in the buttermilk, butter and vanilla. Add in the flour, sugar, baking powder, baking soda, and salt. Mix until relatively smooth. There will still be some lumps. Fold in the chocolate chips and then let the batter rest for a few minutes. Heat the pan or griddle over medium heat. Add a small amount of oil or cooking spray. When the pan is hot enough, pour 2 tablespoons of batter into the pan. Cook the first side until bubbles start to form on the top. Then flip the pancake and cook until golden brown. Repeat until finished with the batter. Put the pancakes on a baking pan in the oven at 200F until ready to serve.
