Stained Glass Jello Shots

Last year at this time, I was in Denmark having the time of my life. But, that means that I missed 4th of July. Every 4th of July I go to my lake house and watch fireworks while sitting on my boat with my family. It's something I really look forward to so I was a little bummed that I was abroad last summer during the holiday. I mean really not that bummed because let's be serious people, I was in Europe and it was awesome. Just because I wasn't in the U.S. didn't mean that I forgot to celebrate! I wore a red, white and blue dress and "made" (more like assembled) a dessert to keep up the spirit. I may have also watched fireworks on YouTube. And by may have I mean I actually did and it was awesome. Here are some pictures of our 4th of July fun last year.

But this year, I'm in the US so many many desserts are necessary. So that's where these jello shots come in. I know what you're thinking... Is this girl even legal? Yes yes, I am. I look like a 16 year old but I'm really 22. Phew, glad we got that one out of the way. I've been seeing stained glass jello recipes all over the internet and have been dying to find a way to make some. I decided 4th of July would be perfect. Then I had an epiphany... JELLO SHOTS!... and immediately set out on a search for a recipe. I found out that when adding alcohol to jello you need to add gelatin. I have no idea why, but that's what my research told me. So if you want to make some kiddie versions you don't need that extra gelatin. I'll mark it in the recipe to make it clear to you all how to make both the kiddie and adult versions.

Ingredients:
Colored Jello:
2 cups water
2 packets unflavored gelatin (I used Knox) - don't need if making kiddie jello!
2-3 oz packets of jello (I used 3 oz. berry blue and 3 oz. strawberry)
2 cups cold vodka, separated - don't give this to the kiddies ;)


White Jello:
2 cups water
2 1/2 packets unflavored gelatin (I only used 2 packets.. whoops! But it turned out grand)
7 oz sweetened condensed milk

Directions:
For the Colored Jello:
Pour water in a small saucepan. Add in the gelatin and let sit for 1-2 minutes, until the gelatin "blooms." Then, heat over low heat, whisking the water constantly until the gelatin dissolves, about 5 minutes. Now get two bowls out. Pour the flavored jello into the bowls, strawberry in one bowl and berry blue in the other bowl. Then, pour half of the water mixture into the strawberry bowl and the other half of the water mixture into the berry blue bowl. Mix until the flavored gelatin is dissolved. Let the jello sit for a few minutes and then pour in the vodka, 1 cup in each bowl. Mix thoroughly. Then, pour jello into separate containers to chill. I used 4 different containers (2 for strawberry and 2 for berry blue) so that my jello would be relatively thin and uniform in shape and size. Put in the refrigerator for at least 4 hours until firm.

For the White Gelatin:
Pour water into a medium sized saucepan. Add in the gelatin and let sit for 1-2 minutes, until the gelatin "blooms." Then, heat over low heat, whisking the water constantly until the gelatin dissolves, about 5 minutes. Then take the saucepan off the heat and add in the sweetened condensed milk and stir. Let the mixture cool to room temperature.

To assemble:

Cut colored jello into small squares.

Layer in a 9 x 13 inch pan however you would like.

Pour cooled white gelatin mixture over the colored jello and put in the refrigerator to chill and solidify.
Cut into individual sized squares. Enjoy!
