Classic Pita Pizza



I've been making pita pizzas since high school and I can't believe I haven't shared the recipe on here yet. I think the idea came from weight watchers but I have since changed the ingredients and measurements so many times that I could not even tell you what the original recipe looked like. A pita pizza is exactly what it  sounds like: a pizza on pita bread. This is my go-to meal. Whenever I need a quick dinner or snack this is what I cook up. It also works great as an appetizer for parties. Just cut it up into small triangles and you have a great party snack. The thing I like about pita pizzas is that they are so versatile. You can use tomatoes, sauce, BBQ sauce, pesto, alfredo sauce, etc. For my classic pita pizza I like to use tomatoes. It feels more luxurious... I don't know why. I'm looking forward to sharing some crazier pita pizzas with you all (mac and cheese pizza anyone?), but for now enjoy the classic!


Ingredients:
1 pita bread (I use whole wheat)
1 tsp olive oil
1/8 tsp dried basil (switch it up with oregano or other italian spices)
5-6 slices of tomato (Roma is my favorite)
1/2 cup fresh mozzarella, cubed

Directions:
Preheat the oven to 350 degrees Fahrenheit. Place pita bread on a baking sheet. In a small bowl, combine olive oil and spices. With a pastry brush spread oil mixture onto the pita bread. Arrange tomato slices onto the pita so that they cover all parts of it. Add mozzarella cubes to the pita, spacing them out equally.


Bake in oven for 10-15 minutes, or until the edges of the pita bread are brown and the cheese is bubbling. Cool for 2 minutes before cutting with a large knife or pizza cutter.

Serves 1-2 people.

  1. The WW one was same except substitute grated parmesan. It's delicious and a little less fattening than all that mozzarella.
