I brought these to the MAcc lab (where all the cool kids hang out in the business school... just kidding. It's the accounting lounge/computer lab) and they went over pretty well. If that's not persuasive enough.. it's 9am and I just ate two for breakfast because they're that good... or because I'm lazy and I tend to eat cookies for breakfast. Both are true.
Ingredients:
1 cup butter, at room temp
1 1/2 cups sugar
2 eggs
1 teaspoon vanilla
2 cups flour
1/2 cup cocoa powder
1 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate chips
1 cup crushed Oreo cookies
Cream butter, sugar, eggs and vanilla together until fluffy, about 3-4 minutes. Add flour, cocoa powder, baking soda and salt. Mix until combined. Stir in chocolate chips and Oreos. Refrigerate dough for 2-4 hours (I froze mine for 30-45 minutes). Now try not eat all of the cookie dough while you wait. When you ready to bake, preheat the oven to 350 degrees Fahrenheit. Roll into 1-2 inch balls or use an ice cream scoop to form balls. Place on a greased baking sheet and bake for 10-12 minutes. Cool for 3 minutes on the baking pan before transferring to a wire rack. Let cool completely before serving.
