Chocolate Strawberry Banana Baked Oatmeal


Don't you just love when your breakfast tastes like dessert? I know I do. Now, this baked oatmeal isn't too chocolatey, but enough to satisfy any chocolate craving that you might have. My favorite way to eat it is served warm with some chocolate chips and a drizzle honey, just to add a little bit more sweetness. If you've never had baked oatmeal before you should definitely try it. The texture is a bit more cake-like than regular oatmeal which is probably why I like it. I just started eating oatmeal a little less than a year ago, so I'm still getting used to the texture. Baked oatmeal is a great alternative to get your family, friends, or even yourself to eat a healthier breakfast. Ingredients:
3 large bananas, mashed
2 eggs
1/2 cup unsweetened cocoa powder
1/3 cup brown sugar
1 tsp vanilla
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
2 cups milk
2 1/2 cups old fashioned rolled oats

1 large banana, peeled, 1/2 inch slices
1 cup sliced strawberries, plus a few more for topping

honey, for topping
chocolate chips, for topping

Directions:
Preheat oven to 350F. In a medium bowl, mash 3 large bananas, to get about 1 1/2 cups of mashed banana. Combine the mashed bananas with the eggs, cocoa powder, brown sugar, vanilla, salt, baking soda, and baking powder. Whisk together until the mixture is smooth. Then, add in the milk and continue whisking until there are no clumps. Stir in the oats and the strawberries. Spray the inside of an 8x8 inch casserole dish or late pie pan with non-stick spray. Pour the oat mixture in the plan. Arrange the banana slices and extra strawberry slices on top of the oatmeal mixture. Bake in the oven at 350F for 45 minutes. Serve warm with a drizzle of honey and some chocolate chips.
