Ingredients:
2 cups all-purpose flour
1/2 cup (1 stick) unsalted butter, cold and cubed
2 tsp baking powder
3/4 tsp salt
1 tsp dried rosemary, roughly chopped
1/2 tsp freshly cracked pepper
1 tsp sugar
3/4 to 1 cup of milk
Directions
Preheat the oven to 400F. In a large bowl, combine flour, baking powder, salt, rosemary, cracked pepper and sugar. Stir until well combined. Add the cubes of cold butter to the flour mixture and work with your hands or a pastry cutter until the butter is worked in to the flour. The texture should resemble dry sand when it is done. Starting with 3/4 cup, add in the milk until the mixture just reaches a paste-like consistency. I used a little less than 1 cup of milk to reach this point. Line a baking sheet with parchment paper and spoon 2/3 cup of dough (there should be 8 dollops of dough). Bake the biscuits at 400F for 18 to 22 minutes, until the biscuits are a light golden brown. Serve warm.
Makes 8 biscuits.
