Mini Cinnamon Muffins


Don't you just love miniature food? It always looks cuter. And I tend to feel more satisfied eating 4 little mini's instead of just 1-2 regular sized muffins. It's a nice little trick to my stomach! These little muffins are a nice treat for breakfast or any time of the day really. They are fluffy and cinnamon-y (is that a word?) and the topping is absolutely to die for. I made these as a breakfast treat for work at my internship during tax season. We were working on a Saturday so I thought this would be a nice treat for everyone. Even better was that one of my other coworkers brought in homemade italian deli meat for lunch which was absolutely AMAZING. Needless to say it was a nice food day at work :)



Ingredients:
1 1/2 cups all-purpose flour
1/2 cup sugar
2 tsp baking powder
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp ground allspice
1/2 tsp ground cinnamon
1/2 tsp vanilla extract
1 egg, slightly beaten
1/2 cup skim milk
1/3 cup margarine, melted

for the topping:
 2 tbsp sugar
 1/2 tsp ground cinnamon
 1/4 cup margarine, melted

Directions:
Preheat oven to 400F. In a large bowl, combine flour, sugar, baking powder, salt, nutmeg, and allspice. Set aside. In a small bowl, combine the egg, milk and margarine and mix well. Add mixture into the dry ingredients. Stir until they are just combined. Spoon the batter into lined or greased muffin tin. Bake at 400F for 12-14 minutes or until a toothpick comes out clean when inserted in the center of the muffin. For the topping, combine sugar and cinnamon in a small bowl and mix well. Then, brush tops of muffins with melted margarine and sprinkle muffins liberally with cinnamon sugar. 

Yields about 24 miniature muffins.

  2. Yum! I agree that mini foods are just more appealing. How can anyone resist one of those cute little muffins sprinkled with sugar:)
