Single Lady Dessert: Peach Cobbler


Oh single lady desserts, how I love thee.

For those of you who aren't aware of what a single lady dessert is, it's simply a dessert that is made for just one person. And I don't mean a regular sized cake that you eat entirely by yourself (who me? I never do that...). I mean just 1-2 regular servings. When you're living on your own and trying to stay in shape, the worst thing you can do is bake 24 brownies everyday. NOT GOOD. The fact that your quick metabolism will eventually stop is not a myth... I swear, I found this out. The freshman 15, also not a myth. But in my case it was more of the I-just-started-a-food-blog-during-my-senior-year-of-college-15. Single lady desserts are your friend.

This peach cobbler is A-MAZ-ING. I have been waiting for my peach to ripen just so I could make this recipe. My roommate Lindsay was home so we were able to share it. It's always more fun to share desserts in my opinion. Then when I make really weird noises exclaiming how good something is there is someone else in the room doing the same exact thing. However, if you don't want to share this peach cobbler, I'd totally understand. It's that good.


Ingredients:
1 ripe peach
1/4 cup all-purpose flour
1/4 cup brown sugar, packed
3 tbsp old-fashioned oats
1/4 tsp ground cinnamon
pinch of salt
1 tbsp slivered almonds
1 tbsp coconut (I omitted)
2 tbsp cold unsalted butter, cubed

Directions:
Preheat oven to 350 degrees Fahrenheit. Place rack in center of oven. Cut a peach in half and take out the pit. Scoop out some flesh so that there is room for the topping.


In a bowl, whisk together flour, brown sugar, oats, cinnamon, salt, almonds and coconut. Then add butter. With your fingers work the butter into the mixture until the butter is the size of peas.


Place the peach halves into a small oven-safe dish. Stuff the crumble topping into the peach halves. The topping will most likely overflow a bit. That's okay, you can eat that later.


Bake for 20 minutes, or until the topping is browned. Eat immediately after baking.


Yields 1-2 servings depending on how generous you are.

  3. holy moly! first of all, i'm so glad to see another awesome recipe from you. i'm sure i've missed recent posts due to going back to school, so i'm about to go check them out after i finish this.

    this looks amazing. any tips on how to get the peach pit out? i always struggle with that

  4. after i slice all the way around the peach and twist the halves so that the pit is in one half, i use a knife to make a slit right on top of the pit and right on the bottom of it just to loosen it. and then with my thumb i get under the pit and scoop it out. for this recipe however, you can just cut around the pit and scoop it out with a spoon since you have to get rid of some of the extra flesh anyways!
